Easy Ramen NOODLES

Ingredients

  • 1 Tbsp Sesame Oil
  • 1 Cup Carrots, shredded
  • 1 Cup Sugar Snap Peas
  • 1 Fresh Lime
  • 1 Cup mushrooms (I prefer Oyster Mushrooms)
  • 1 1/2 tsp minced Ginger
  • 2 Tbsp Curry Paste
  • 2 1/2 tsp Curry Powder
  • 5 minced Garlic Cloves
  • 6 Cups Vegetable Broth
  • 1 Can Unsweetened Coconut Milk
  • Ramen Noodles (The amount is to your preference of noodle ratio to soup)
  • Salt and Pepper

Instructions

  • In a large pan, heat oil  adding carrots, peas and mushrooms. Now is a good time to add salt and pepper
  • While stirring, gradually add your curry powder, curry paste, Garlic and Ginger. Keep stirring for about a minute and a half. 
  • Now you want to pour in your liquids (coconut milk and broth). Add salt and pepper to taste.
  • You want to turn the heat high enough to make the soup simmer, then add your noodles. 
  • Once noodles are done, scoop this yumminess into a bowl, throw some cilantro on top, add a wedge of lime and sprouts!
