ISRAELI SALAD

Ingredients

  • 1 1/2 Cups Cooked Pearl Couscous
  • 1 1/2 Cucumbers (I use English)
  • 3 Ripe Tomatoes, seeded and diced
  • 1/3 Cup Diced Fresh Onion
  • 1/2 Minced Fresh Parsley
  • 1/3 cup Fresh Lemon Juice
  • 3 Tbsp Olive Oil
  • Salt to taste

Instructions

  • Cook couscous completely
  • Dice cucumbers, tomatoes, onions, and parsley
  • Dump that yumminess in with the couscous
  • Add Lemon Juice, Olive Oil, and salt
  • Mix well
  • I like to make this in advance and let sit in the fridge for a few hours. However, Wonder Twin B prefers hers warm. Personal choice. 
  • This should stay for 3 to 4 days in the fridge
