GARLIC SCAPE PESTO

Ingredients

16 oz. Angel Hair Pasta


 SAUCE

10 Garlic Scapes

1/3 cup Walnuts

2 tsp Nutritional Yeast

1/2 Lemon Juice

1/4 tsp Sea Salt

1/8 tsp Fresh Ground Black Pepper

1/3 cup Extra Virgin Olive Oil




Instructions

  1. Cook Noodles: Cook pasta according to the packaging. I always start making the pesto while the noodles cook so everything will be done at the same time. 
  2. Trim Garlic Scapes: Trim the garlic scapes just below the bulb, then discard. (The bulb is the pointed tip). You want to avoid including the tip as it is tough and can be stringy causing the pesto to not be as smooth and blend with your pasta as easily. Cut the stem into one inch portions. 
  3. Grab your food processor, throw in your garlic scapes, walnuts, nutritional yeast, lemon juice, salt and pepper. Pulse the food processor until the mixture is mixed up and all ingredients are ground. 
  4. While the processor is still running, slowly add all of the olive oil continuing to process until it is well blended and creamy-ish. This should take less than 1 minute depending on the speed of your food processor. 
  5. Once the pasta is cooked, drain it and then add your garlic scape pesto sauce. Stir to combine.
