CHEDDAR JALAPENO BISCUITS

Vegan Jalapeno and Cheddar biscuits

Ingredients

2 Cups Flour

1 Tbsp Baking Powder

2 Tbsp Sugar

3/4 tsp Salt

1/2 Black Pepper

1/2 Cup Vegan Butter (cold works better)

3 Fresh Jalapenos, seeds removed and diced

1 Cup Vegan Cheddar Cheese (I grate my own)

3/4 Cup Non-Dairy Milk 

Instructions

  1. Pre-Heat oven to 350 degrees
  2. Grease or line your baking sheet with parchment paper
  3. Mix in large bowl the flour, baking powder, salt, pepper, sugar. Whisk well. 
  4. Add butter to the mixture and mix well with fingers until coarse.
  5. Mix in Jalapenos and cheese.
  6. Add almond milk slowly and mix. The mixture will be sticky when ready. 
  7. Place dough on floured surface. Knead until worked into a ball. DO NOT overwork or your biscuits will be flat and dense. 
  8. Flatten/Work dough to a 1" thick surface. Using a biscuit cutter or a glass rim to create as many biscuits as possible. Re-work dough and repeat. 
  9. Place the biscuits on the cookie sheet and bake 20 minutes or until golden. 
  10. Enjoy!
