MOM'S BEST Mac'n'cheese

Ingredients

16 oz. Pasta of your choice


CHEESE SAUCE

1 1/2 cups Raw Cashews

2 cups Water

3 tbsp Fresh Lemon Juice

1/3 cup Nutritional Yeast

1 Clove Fresh Garlic

1/2 tsp Onion Powder

1 1/2 tsp salt





Instructions

  1. Soak your cashews: Place your cashews in a bowl and cover them with boiling water for at least 5 minutes. This will allow your cashews to soften for the blending process that creates your cream sauce. 
  2. Cook Noodles: Cook these according to the packaging, unless you make your own macaroni. If that is the case, kudos to you. You should have your own website. Stop making this recipe and get with a marketing person. Stat. 
  3. Blend Ingredients For Sauce: After draining your cashews, pour them in either a blender or a food processor large enough to accommodate the ingredients. Add your water, lemon juice, nutritional yeast, garlic, onion powder, and salt. Blend this on high until the mixture is very smooth. You want to be certain all of the cashews are ground. Don't sweat it if it seems a little runny. It will still coat your pasta appropriately. 
  4. Once the pasta is cooked, drain it and then add your sauce. Stir to combine. You can sprinkle vegan cheese on top or you can throw this concoction into an oven safe pan and bake it for 10 minutes. The options are limitless.
