PEANUT BUTTER & 'NANA MUFFINS

Ingredients

2 Cups Flour (I use All-Purpose Flour)

2 Tbsp Sugar

1 Tbsp Baking Powder

1 tsp Baking Soda

1/2 tsp Salt

1 1/2 Cups Ripe Bananas, Mashed

1/2 Cup Peanut Butter

1/2 Cup Brown Sugar

3/4 Cup Unsweetened Non-Dairy Milk

1 tsp Vanilla Extract

1/2 Cup Walnuts, chopped

Instructions

  1. Heat your oven to 375 degrees
  2. Mix Flour, Baking Powder, Salt in a medium bowl.
  3. In a separate bowl, mix peanut butter, brown sugar, milk, banana and vanilla. Mix until creamy. 
  4. Slowly mix dry ingredients into wet ingredients. Mix until all dry ingredients are incorporated but not too much. It will cause the muffins to become tough. 
  5. Spoon the batter into muffin tins, then sprinkle the muffins with the nuts. You can always mix the nuts into your batter. Totally your preference. 
  6. Bake for about 20 minutes or until a tooth pick is clean when inserted.
