VEGAN CRAB CAKES

Ingredients

1 lb. Lion's Mane Mushrooms

1 Cup Garbonzo Beans (drained but keep 1/4 cup of aquafaba) 

1/2 Cup of Bread Crumbs

1/8 Cup Shallots

1/4 Vegan Mayo

2 tsp Seafood Seasoning (I like Bay Blend by Chef Jon Bonnell)

3 Cloves of Garlic, minced

1/4 Cup of Lemon

Salt & Pepper to taste

Instructions

  1. Heat your oven to 300 degrees
  2. Slice Lion's Mane mushrooms into 1/2 inch slices
  3. Lay on cookie sheet lined with parchment paper
  4. Drizzle with olive oil
  5. Bake for 10 minutes, flip and bake for another 10 minutes. 
  6. Put Garbanzo beans, reserved aquafab and mushrooms in a food processor. Pulse about 4 or 5 times, quickly. 
  7. Transfer mushroom mixture to a mixing bowl, add all other ingredients and mix well. 
  8. Mold mixture into round patties (should make around 8 patties)
  9. Add patties to a heated skillet on medium flame (you should not need any oil)
  10. Cook until golden brown, flip and cook other side until golden brown. 
  11. Enjoy!
